BLUEBERRY COBBLER RECIPE

To make this easy blueberry cobbler, follow these simple step-by-step instructions. Because we’re multi-tasking by melting the butter while preparing the batter, the process below should take about 4 minutes.

  • STEP 1: Preheat oven to 350°F. Melt butter on the stovetop in a 10-inch cast-iron skillet.
  • STEP 2: In a mixing bowl whisk these dry ingredients together: flour, sugar, baking powder, salt, cinnamon, and lemon zest.
  • STEP 3: Add the wet ingredients to the bowl: milk, vanilla and lemon juice. Whisk until the mixture is smooth.
  • STEP 4: Briefly swirl the butter in the skillet to butter the sides of the pan. This will help prevent the cobbler from sticking. Pour the batter into the skillet, directly on top of the butter.

BERRY COBBLER

  • STEP 1: Evenly scatter the blueberries on top of the batter.
  • STEP 2: Sprinkle the remaining granulated sugar on top. If desired, reserve a tablespoon of sugar for sprinkling over the finished baked cobbler. This will give it added sparkle and texture!
  • STEP 3: Bake the berry cobbler for 30 minutes or until the topping is golden brown and the blueberries are bubbly.
  • STEP 4: Remove cobbler from the oven. Allow it to cool for 10 minutes.

Description

Warm, comforting blueberry cobbler is a delicious southern dessert! With a golden top and bubbly filling, it’s so darn satisfying. For added pleasure, serve it with a large scoop of vanilla ice cream. Make this berry cobbler recipe in 35 minutes!

Ingredients

  • 1/2 cup butter (1 stick)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar for the batter (plus more for sprinkling)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 lemon – zest and juice
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 1 3/4 cups fresh blueberries
  • 1/4 cup granulated sugar for sprinkling on top

Instructions

PREP: Adjust oven rack to the middle position. Preheat oven to 350°F.

  1. Melt butter on the stovetop in a 10-inch cast-iron skillet.
  2. As the butter is melting, take out a medium mixing bowl. Add the flour, 1 cup of granulated sugar, baking powder, salt, cinnamon and lemon zest to the bowl. Whisk until combined. Add the milk, vanilla and lemon juice to the bowl. Whisk until the mixture is smooth.
  3. Briefly swirl the skillet to butter the sides of the pan. Pour the batter into the skillet, directly on top of the melted butter. Add the blueberries to the skillet, evenly scattering them on top of the batter. Sprinkle the surface with remaining granulated sugar. If desired, reserve one tablespoon of the sugar to sprinkle on top of the finished baked cobbler, giving it added sparkle and texture.
  4. Bake the berry cobbler for 30 minutes or until the topping is a beautiful golden brown and the blueberries are bubbly. Remove cobbler from the oven. Allow it to cool for 10 minutes.
  5. Serve blueberry cobbler directly from the skillet! Top each serving with a rounded scoop of vanilla ice cream!

  9. This is the 2nd time we made this and it is absolutely delicious. 1st time we made it exactly as written and it was great. 2nd time I subbed out sugar for monk fruit and 6 Tbs instead of 8 Tbs of butter, and it was still great. Thanks for sharing!

    1. Hello Maggie! I’m so glad you found this yummy blueberry cobbler recipe. My Staub cast-iron pan has an enameled interior that’s super easy to clean. But when Grandma made cobbler she used a Lodge cast-iron pan. I don’t remember whether it was easy to clean or not, but considering how often she made this recipe the clean-up probably wasn’t a lot of work.
