Gordon Ramsay's salmon-en-croute recipe is consistently popular all year round, but it really makes sense on the Christmas menu. It’s big and it’s show stopping and you can bring it to the table in a flourish and carve it up from whole if you so choose. And it’s buttery and flaky and herby and delicious and moist – can you always say about that every Christmas roast turkey?
Fish seems to traditionally be part of the Boxing Day menu, from a side of smoked salmon to a breakfast bowl of kedgeree, if you have the room. For fish seems a little more indulgent to cook than meat, something you’re more likely to do when you have time and friends over and are in an eating kind of mode. But it also works very well as a canapé to serve at a drinks party, or as a Christmas starter.
Which is why we’ve pulled together this selection of our best Christmas fish recipes, things to make that aren’t particularly involved but seem impressive, and work for entertaining. From Gravlax to bring out as Christmas canapé to a really moreish recipe for mini trout tartlets, we’ve got your Christmas menu covered.
