Fast and simple is not my speciality and not at all what I do in the kitchen at Vinnies so whenever I do have to cook dinner for the family after rushing back from ballet or rugby practice, my wife Jane laughs at how long it jolly takes me and how many dishes I produce. So it’s three of Jane’s recipes I am sharing here to help us all get dinner on the table quickly and efficiently.

These burgers always go down well with our three kids, we keep the fillings pretty simple, but you can get as fancy and creative as you wish. This is also a great way to incorporate fish into their weekly diet.

Burgers

4 filletsFresh fish (Main)
1 tspSalt
½ cupFlour
2Eggs, whisked
2 cupsPanko breadcrumbs
4Burger buns
2 TbspVegetable oil
2 TbspButter
4Lettuce leaves, washed
2Heirloom vine tomatoes, sliced
1Avocado, sliced
1 servingTartare sauce, recipe below

Tartare sauce

½ cupMayonnaise
1 TbspCapers, chopped
2 TbspGerkin, or cornichons, chopped
1 TbspWhite wine vinegar
1 TbspChopped chives, or chopped parsley

Directions

  1. Season fish with salt, coat in flour, dip into egg then press into breadcrumbs.
  2. Slice buns in half and toast under a hot grill.
  3. Heat vegetable oil in a large frying pan until hot. Add butter and as soon as it foams add fish and cook until golden on both sides.
  4. Build burgers with lettuce, tomato, fish, avocado and tartare sauce, recipe below.

For the tartare sauce

Mix all ingredients together, season with fine salt and freshly ground pepper. Keep in the fridge until needed.
