Ingredients

Cauliflower salad

  • 1½ lbs 650 g cauliflower
  • salt and ground black pepper
  • ½ cup 120 ml water
  • 5 oz. 140 g bacon
  • 3 (4¼ oz.) 3 (120 g) celery stalkcelery stalks
  • ½ (2 oz.) ½ (55 g) red onionred onions
  • 2 tbsp 2 tbsp fresh chives

Dressing

  • 1½ cups 350 ml mayonnaise
  • ¾ tbsp ¾ tbsp Dijon mustard
  • ¾ tbsp ¾ tbsp cider vinegar
  • 1 pinch 1 pinch salt
  • 1 pinch 1 pinch ground black pepper

Making low carb simple

Instructions

Instructions are for 6 servings. Please modify as needed.

Cauliflower salad

  1. Preheat the grill on low heat.

  2. Chop cauliflower into bite-sized chunks. Divide and place pieces on two separate sheets of aluminium foil in a flat layer. Season with salt and pepper.

  3. Lift foil edges so it slightly covers the cauliflower. Pour 1/4 cup of water onto each cauliflower package. Cover with another piece of foil and wrap properly, make sure the water doesn't escape. Grill for 15-20 minutes on the side, avoiding the hot center and leaving space for the bacon.

  4. Lay bacon slices in a grill pan with high ridges. Grill for 10-15 minutes until crispy. Flip them halfway through.

  5. Chop celery stalks into small pieces, finely dice the onion and chives.

  6. Remove bacon from the grill. Once cooled, chop into small pieces.

  7. Remove cauliflower and carefully unwrap. Allow to cool completely. Once cooled, add cauliflower in a big bowl. Add bacon, celery, onions and chives. Save a few pieces for topping.

Dressing

  1. In a bowl, combine mayonnaise, mustard and cider vinegar. Season with salt and pepper. Stir until combined.

  2. Pour over the cauliflower salad and toss to combine evenly. Top with bacon and chives.

No-grill prep

You can also prepare the cauliflower on the stovetop. Steam or boil for 15 minutes or until fork-tender.

For the bacon, preheat the oven to 400°F (200°C). Lay bacon in a single layer onto baking sheet and bake until crispy for about 10-15 minutes.

Matt and Megha's tip

This salad is best when totally cooled. Refrigerate for a few hours before serving for the ultimate experience.

    I"m so excited to try this!!! I used to be a huge potato fan (I live in Idaho!) and now I don't ever eat them. I think I will add hard boiled eggs to your awesome recipe as that is how I always made my potato salad back in my 300+ carbs per day lifestyle - yikes!!! Thanks for all you do to help us find fun and fabulous recipes!

    I like Matt and Megha but some of their recipe macros are uneven. It would be helpful to mention how many ounces of meat and how to prepare the meat in order to bring the protein content more in par with strict keto.

    I tried this and was surprised I did not miss the potatoes. This was really good. I use frozen cauliflower and steamed it, then added onions, bacon and eggs, mayo and mustard. I let it chill for a couple of hours and it was so good that I had to make it again the next day. So glad I have a potatoe salad substitute now.

    Nicholas, May I say that the simpler you can do Keto, the better? I no longer worry about portion sizes or macros. I did once! Now I just please myself and eat to satiety. It’s like a weight fell off my shoulders! Not to mention the weight that’s falling off the rest of me lol!

    The grill you talk of is shat we in UK a BBQ or griddle as opposed to what we in the UK would class as grill which is overhead heating, the American would call a broiler I believe.

    Its basically creating a steam parcel, which you could pop in the oven or you could simply steam your cauliflower, in a steam pan.

    The translation on DD is normally Swedish to American

    Tried it. Not bad. Surprised wife liked it (non-keto/lchf). I think next time I’ll leave off the vinegar since it seems to break down the mayo too soon. Went to get some for breakfast this morning and had to add more mayo.

    This is loveelyyyy....but 350ml mayo seems an awful lot I had to leave almost half out. Is this an accurate measurement for us in the UK?

    Yes, it's an accurate conversion but you are always free to tweak recipes to meet your preference!

    This was my first cauliflower salad, and everyone at our July 4th party wanted the recipe (even non-keto people). We had a 'real' potato salad in the fridge just in case it was a flop, and that was never even opened. While I think I would know the difference, my friend did not want her husband to know it wasn't potato salad, and when he tried it he said what a great potato salad it was and he wanted my friend to get the recipe, lol! When she told him it was cauliflower he was surprised and got a second helping. I tweaked mine a bit with additional pepper and dijon as it was a bit bland imo, and I just steamed the cauli and oven pan cooked the bacon. Multiple requests for this recipe were made. It's a keeper at our house.

    We added a little curry because that ain’t what we used to do with potato salad and it was a PERFECT substitute.
    We will definitely make this again. And the day we can “afford” more carbs we will add a little green apple too. That’s how Mama’s Danish potato salad always was made!

    Made this today for lunch and planned leftovers, using olive oil Mayo. Great! Perfect! Added some fresh parsley for garnish and fiber

    May try the Greek yogurt, mentioned by Dianne above, just to see how it changes the flavor. May also add hard boiled egg (which we steam rather than boil).

    We haven't tested it, but it sounds like it would be really good. It may have a non-traditional flavor, but if you like the flavor of roast cauliflower, that wouldn't necessarily be a bad thing!

    This salad is amazing! I love it! Even my non-keto husband really liked it! Can't wait to try it on dinner guests!
    (I've never put bacon in potato salad so I subbed in hard boiled eggs which was the norm for my potato salad)
