Tips to the Best Mashed Potatoes Recipe

  • Always start your potatoes in cold water and bring it up to a boil and don’t add the raw potatoes to boiling water. This helps the potatoes cook evenly and not fall apart/overcook.
  • Be sure to fully drain your potatoes before you mash them. You don’t want it to be watery.
  • It’s important to salt your water when cooking the potatoes as it helps flavour the potatoes early on and makes the potatoes more flavourful. This also means you can add less salt later since there’s already flavour.

I suggest using unsalted butter for this mashed potatoes recipe since we are seasoning with salt and pepper. If you only have salted butter, I suggest tasting as you go to not make this creamy mashed potatoes recipe overly salty.

What if I don’t have heavy cream?

Half and half is a good alternative if you don’t have any heavy cream on hand.
Whole milk also can work in a pinch as well but keep in mind that the heavy cream in the recipe helps with giving the mashed potatoes a creamy luxurious texture. If you use something like slim milk, your mashed potatoes won’t come out as creamy.

FAQs

Why do restaurant mashed potatoes taste better? ›

Whereas most home cooks will use a pinch of butter, a couple of shakes of salt, and a bit of milk, steakhouse chefs aren't afraid to go all out with the dairy. There's no room for 2% or even whole milk in their mashed potatoes — the thinness of plain milk just isn't creamy enough to cut it. And creaminess is key!

Why do you soak potatoes in water for mashed potatoes? ›

Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

What is the trick to thicken mashed potatoes? ›

Whisk a little cornstarch into the warm potatoes, only a teaspoon at a time, until the potatoes thicken to your liking. The potatoes must be warm. You can also use tapioca starch or potato starch, although most cooks are less likely to have those products on hand.

What is the most efficient way to mash potatoes? ›

A potato ricer is widely regarded as the best tool for mashed potatoes that are smooth and fluffy. Built like a big garlic press, it works by pushing cooked potatoes (one or two at a time) through a perforated grate, creating stringy, broken-down potato bits without releasing a ton of starch.

How do restaurants make their mashed potatoes so good? ›

If their kitchen isn't put together well enough to make mashed potatoes from fresh potatoes it would leave me wondering what other corners they are cutting. Restaurant mashed potatoes often taste better due to the use of higher-fat content ingredients like butter and cream, which enhance the flavor and creaminess.

What does Gordon Ramsay put in his mashed potatoes? ›

Gordon Ramsay's mashed potatoes are known for their richness and flavor. He typically adds butter, heavy cream, and sometimes crème fraîche to his mashed potatoes for a creamy and indulgent texture. Additionally, he often incorporates roasted garlic or chives for extra flavor.

What is the 1 ingredient upgrade for the fluffiest mashed potatoes? ›

The secret ingredient is just ice-cold water.

You soak the potatoes in iced water before they are cooked. This eliminates much of the starches in the potatoes, resulting in a super light and fluffy mash. It's also like when you make rice.

Is it better to cut potatoes before boiling for mashed potatoes? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

How long to boil a potato for mashed potatoes? ›

How Long to Boil Potatoes for Mashed Potatoes. Peeled and quartered potatoes should be perfectly boiled after about 15-20 minutes. If you leave your potatoes whole, it will take a bit longer.

How do you make mashed potatoes fluffy and not gluey? ›

As already discussed, pastiness is caused by too much potato starch being worked into the mashed potatoes. The main way we combat this problem is by rinsing away starch, both before and after cooking potatoes for fluffy mashed potatoes. Rinsing off starch means that there is less of it that can end up in the dish.

Is cornstarch or flour better for thickening mashed potatoes? ›

For what it's worth, we recommend sticking with cornstarch—it has twice the thickening power of flour and it's safe for gluten-free diets. Stir in the thickening agent gradually, about a tablespoon at a time, until the potatoes have reached your desired consistency.

What to do if you put too much milk in mashed potatoes? ›

Add a Thickening Agent

This is the most common way to thicken mashed potatoes. You can use what you have on hand: Flour, cornstarch, or powdered milk are all solid options that are probably already in your pantry. Potato flour and potato starch would work as well.

How do restaurants keep mashed potatoes fresh? ›

Restaurants prepare the potatoes ahead by boiling and mashing just the potato, then just before serving, it is mixed into boiling cream (or milk or even broth or a combination thereof) to reheat it and make it nice and creamy.

Can you over boil potatoes for mash? ›

For good measure: Be careful not to overcook potatoes you plan to mash, because the starch cells will break down and create a sticky mash. Cook them just until a thin-bladed knife meets a bit of resistance. It is also important to drain the potatoes well after cooking to prevent gumminess.
