BUT soup can get boring. Especially if you’re living off soup for a week with the focus of losing weight. And I know this because I have already done my own super speed soup week.

However, what if the focus was on a similar mix of healthy vegetables and instead you used it as a base for the most delicious healthy curry that you have ever tried?

Ingredients

Chicken Curry Base:

  • 300 g Carrots
  • 200 g Leeks
  • 150 g Celery
  • 300 g Courgettes
  • 500 g Butternut Squash
  • 150 g Red Pepper
  • 200 g Pumpkin
  • 6 Cloves Garlic
  • 2 Cm Fresh Ginger
  • 2 Cans Tinned Tomatoes
  • 1 Small Red Onion
  • 1 Small White Onion

Vegetable Curry:

  • 300 g Butternut Squash
  • 1 Small Red Pepper
  • 1 Small Red Onion
  • 1 Small Leek

Seasonings:

Instructions

  • Prepare the curry base ingredients. Peel the carrots, ginger, garlic and the onions. Clean the celery and the leeks. Peel and remove the seeds from the butternut squash and pumpkin. Thinly slice the onion, garlic and ginger. Dice everything else into medium diced chunks.

  • Add the curry base ingredients to the slow cooker along with the seasonings and the cans of tinned tomatoes. Also refill the tinned tomatoes cans with water and pour it into the slow cooker.

  • Cook on high for 2 hours or until the vegetables are soft.

  • Repeat step 1 again but this time with your vegetables for the curry.

  • Using a blender, blend until you have a smooth sauce.

  • Add the sauce back, along with the rest of the vegetables and cook for another 2 hours on high.

  • Serve warm.

Notes

If you find that your speed curry is too thin, then find some of the bigger pieces of butternut squash and blend those. It will give you a creamier sauce. Or you can add in some quark or Greek yoghurt. Though if you want it as a SP meal then just use quark and protein rich meat as add ons.

This speed curry is a good base for recipes. You can add chicken or whatever you like to it and then just swap steps 4 and 6 for your choice of curry filling. If you prefer a spicier curry then increase the size of your ginger piece or add more chilli powder. I like a mild curry like a vegetable korma because I am often sharing it with small children.

How To Batch Freeze Your Slimming World Chicken Curry

Make our Slimming World Speed Curry once and then batch freeze it for later! The Slimming World Speed Curry ingredients above was made with batch freezing in mind. There is enough for 10 portions. So if you’re bulking it out with chicken or other foods, then you could easily stretch this to 15 portions.

When you have finished cooking and it is 100% cool then transfer the speed curry into freezer friendly containers. Then batch freeze it for later. Plan for the portion sizes you will eat, so if you are eating it for 2-3 meals a day, then do a medium sized portion and label it up for later.
