I´m a huge fan of pasta dishes and this One-Pan Poor Man´s Pasta sits right up there with the best of them. Made with the most basic ingredients, super easy to make and done in just 30 minutes. Truly, the perfect dish for a busy weeknight dinner or a relaxed weekend lunch.
This is a pasta dish that dates back hundred´s of years, where peasants would create recipes just like this one using ingredients they grew in their own land. Healthy, inexpensive and packed with a ton of flavors.
To make this recipe, I used the typical vegetables that are used in the Mediterranean. But you can use whatever vegetables you like or whatever you have on hand. For the pasta I used penne pasta. But once again, you can use any type of pasta you like. Though thicker cut pastas work best here
TIPS & TRICKS to Make this Recipe: This is a one-pot pasta, which means all the ingredients are cooked in the same pan. I used 2 1/4 cups penne pasta to 2 1/2 cups liquid. However, every pasta cooks differently, so you might need to add in a bit less broth or even more broth. But typically this ratio works best.

The Iconic Poor Man´s Pasta | Easy One-Pot 30 Minute Recipe

Ingredients
- 2tbspextra virgin olive oil40 ml
- 1onion
- 4clovesgarlic
- 1red bell pepper
- 1green bell pepper
- 6fresh tomatoes
- 1tspdried oregano1 gram
- 2 1/2cupsvegetable broth600 ml
- 2 1/4cupspenne pasta8 oz / 225 grams
- 1/2cupblack pitted olives90 grams
- 1/4cupfinely grated Manchego cheese30 grams
- pinchsea salt
- dashblack pepper
Instructions
Roughly chop the onion, thinly slice the garlic, roughly chop the red & green bell pepper and finely grate the tomatoes to end up with 1 1/2 cups (360 grams) tomato sauce
Heat a large fry pan with a medium heat and add in a generous 2 tbsp extra virgin olive oil
After 2 minutes, add in the onion, garlic and bell peppers, mix with the olive oil, after 4 minutes and the vegetables are lightly sauteed, add in the finely grated tomatoes, 1 tsp dried oregano and season with sea salt & black pepper, mix together, then turn up the heat to a high heat and simmer
Once the tomato sauce has thickened, about 3 minutes, add in 2 1/2 cups vegetable broth and bring to a boil, then add in 2 1/4 cups penne pasta, mix every 2 minutes
After about 8 minutes and most of the broth has been absorbed by the pasta, but there is still some broth left, place a lid on the pan and lower to a low-medium heat
After simmering for 3 to 4 minutes and there is virtually no broth left, remove the lid from the pan and the pan from the heat
Add in 1/2 cup black pitted olives over the pasta, finely grate in a kiss of Manchego cheese and sprinkle with finely chopped fresh parsley, serve at once, enjoy!
